Pork Ramen Using the Instant Pot

Our family loves ramen.  I’ve found a way to crank out a good ramen in the Instant Pot and it’s amazing with homemade noodles!

Pork Ramen Recipe

Ingredients

BROTH

  • 3 Onions, Sliced
  • 2 Tbsp Oil
  • 1 Cup Dried Sliced Shitake Mushrooms
  • 1 piece of Dried Kombu
  • 1 lb Slab of Pork Belly
  • Crosscut Pork Ribs
  • 1/2 Chicken Carcass or 1/2 lb Chicken Leg Nubs
  • 1/4 cup white wine vinegar
  • Salt
  • White Peppercorns, teaspoon

NOODLES

  • 1 1/2 Cup Bread Flour
  • 2 Eggs
  • 1 tsp salt
  • 2 tsp Kansui

EXTRAS

  • Salt, to taste
  • Soy Sauce, to taste
  • Bok choy, washed
  • Egg, boiled
  • Sliced Wood Ear, reconstituted in boiling water
  • cilantro, optional
  • green onions, optional

Rib Sauce

  • Hoisin, vinegar, and soy sauce

Brown onions in oil using the InstantPot on Saute Mode.  Meanwhile soak meats in boiling water and drain, add to pot.  Add mushrooms and kombu.  Add peppercorns and salt to taste.  Add vinegar and enough water to cover.  Set the pot for high pressure for 60-80 minutes.  Allow to release naturally.

Make noodles by placing all ingredients in a food processor, adjusting flour or water so that it balls up nicely. Knead a little before wrapping in plastic wrap. Allow to rest for at least 20 minutes.  Roll out with pasta machine to a thickness of 3 and then cut noodles.  Hang to dry until ready to use.

Prepare eggs by boiling them for 6 minutes, placing them in an ice bath and then peeling them.  Prepare wood ear by placing in boiling water for 5 minutes, strain.

Carefully, open the instant pot lid.   Using tongs, remove all rib meat and pork belly.  Coat with rib sauce and place in broiler for 10-20 minutes.  Meanwhile, separate the broth from the remaining items (discard carcass, etc).  Use a fat separator to separate the fat from the broth and place broth back into the InstantPot, discard fat.  Season the broth with salt and soy sauce.  Add bok choy.  Bring to a boil.

Boil noodles in salted water for 3-4 minutes, or until al dente.  Prepare ramen bowls by placing noodles, half egg, wood ear, pork ribs, pork belly, broth and bok choy, and then finish off with cilantro and green onions.  Enjoy.
