The InstantPot is not the place for a good gumbo….

This morning, I searched google for “can you pressure cook a roux” and the results I found mentioned a recipe in the instant pot for gumbo…so I decided to go ahead and try to make gumbo in my magic pot.  That is where the little pot failed me.  First of all, you cannot get the pot hot enough to get a good dark roux.  Maybe I did something wrong, but I waited it out for 45 minutes and even had to press the saute button one more time because I think the pot was convinced I no longer had food in it (or the 30 minutes were up).  The roux was caramel colored, but nowhere near the color I usually get in my cast iron pot.  Then, when I added the rest of the ingredients, the pot just wasn’t the right temperature to brown much of anything…maybe I over loaded it, but c’mon, I had to pick up the kids from school!  In any case, I got back to the pot three hours later and I had a separated gumbo – oily on top and a murky liquid underneath.  I was able to kind of resuscitate it with some okra, but I post this in the hopes of saving someone out there from having to serve pale, sad gumbo…skip the instant pot!!
